Apple Oatmeal Breakfast Cookies

Ingredients:

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 6 tablespoons butter, softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup shredded apple
  • 1/2 cup raisins (optional)
  • cinnamon and sugar for sprinkling

Directions:

  1. In a large bowl, stir together the oats, flours, salt, baking powder, baking soda, cinnamon and nutmeg.
  2. In another bowl, cream together the butter and brown sugar until combined.  Add the eggs vanilla and cream until light and fluffy.
  3. Add the dry ingredients and mix until combined.  Stir in raisins.
  4. Chill the dough for 1 hour.
  5. Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.
