Roasted Brussel Sprouts

  • 1 1/2 lbs brussel sprouts
  • 4-5 tbsp olive oil
  • 3/4 tsp salt
  • 1/2 tsp pepper

Preheat oven to 400 degrees.

Cut off bottom ends of brussel Sprouts and pull off yellow leaves.

Mix them in a bowl with olive oil, salt and pepper.

Pour them into a baking sheet and bake for 30-35 minutes.

Sprinkle with more salt if needed before serving.

Pumpkin Patch Dirt Cups

This recipe is on our calendar for next week!  The “Littles” L O V E to cook!

Ingredients:

  • Instant Chocolate Pudding
  • 2 pkg Oreo Cookies
  • Pumpkin Candies
  • Clear Plastic Cups

Directions:

  1. Crush the Oreo cookies.
  2. Make the pudding, according to package directions.
  3. Layer oreo cookies and pudding into a clear cup.
  4. Top with pumpkin candies

Apple Oatmeal Breakfast Cookies

Ingredients:

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 6 tablespoons butter, softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup shredded apple
  • 1/2 cup raisins (optional)
  • cinnamon and sugar for sprinkling

Directions:

  1. In a large bowl, stir together the oats, flours, salt, baking powder, baking soda, cinnamon and nutmeg.
  2. In another bowl, cream together the butter and brown sugar until combined.  Add the eggs vanilla and cream until light and fluffy.
  3. Add the dry ingredients and mix until combined.  Stir in raisins.
  4. Chill the dough for 1 hour.
  5. Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.

Chicka Chicka Boom Boom

We started our preschool week off with a little Back To School theme.  The “Littles” love Chicka Chicka Boom Boom so I figured if we focused our week around a favorite book they’d have a great time.  We are a young group of “Littles”.  Some are still learning to talk.  Others are just putting together sentences.  None of them no how to spell their names or identify their names so we make a Palm Tree using their arms and hands.  Then we put alphabet stickers on it to spell out their names.
